Salmos is born from a beautiful and hidden land. The vineyards, planted on steep slopes of schist (licorella stone), are subjected to strong temperature changes between night and day. And these natural hazards contribute to the charm of this wine. Salmos is a tribute to the monks of the valiant Carthusian order who in the year 1095 came to the "Priorat" where they cultivated vines. In 1835 a violent mob destroyed a life's work and sacked the Carthusian monastery, events that would later culminate in the "Disentailment of Mendizábal". In 1996 the Torres family began planting vineyards on licorella stone slopes.

Provenance
The slate or licorella stone creates poor and not very fertile soils that contribute to a lower vigour of the vines and this results in low quantity but high quality harvests. The licorella stone has the property of acting as a temperature regulator, absorbing heat during the day and expelling it at night.


Gastronomy

Excellent with game meats, roasts, lamb stews and also with pasta cheeses, such as Manchego, Roncal or tender Mahón.
Serve between 16 - 18º C.


Tasting notes
Dark in colour, reminiscent of jam and liquorice, on a soft spicy and toasted background, from the French oak barrels.
