The grapes are fermented in stainless steel tanks at a temperature ranging between 25º and 29ºC.
Maceration is then carried out for 2 to 4 weeks, depending on the variety, while malolactic fermentation takes place
Once finished, the wines are transferred to French oak barrels of 2º and 3º use of 225 liters of capacity
The months in barrel depend on the variety and the vintage, with 9 months being the average aging time
Once the aging is finished, we proceed to the coupage of the different varieties and a natural clarification by gravity, to leave the wine shiny before bottling
