The Sardinillas en Aceite de Oliva are presented in a traditional tin packaging and after a strict selection, we guarantee a traditional and at the same time avant-garde flavor. A product of always, with great properties and nutritional benefits, updated with the artisan techniques of the master canner. These young specimens of sardines are demanding and present an intense work of elaboration since their arrival at the factory
They are treated with special care and attention so that no specimen suffers breakage and spoils its delicate presence and its characteristic silvery appearance. Subsequently, and after going through the selection, cleaning and beheading process, they are steamed to be finally packed by hand one by one.
Western Asturias has been the cradle of some of the most important canning factories in the region, acquiring special relevance after the reform of the port of Tapia in 1880, which promoted the establishment of large salting and canning industries in the town
The canned products of Tapia have been synonymous with quality for many decades, and this quality is what El Viejo Pescador has been able to recover since 1998. It opened its doors 17 years ago and since then has been producing canned white tuna in olive oil and pickled tuna, Cantabrian anchovies, mussels and sardines
They elaborate their preserves with selected raw materials that maintain all the original flavor of their habitat and that are reflected in the quality of all their products
The star of El Viejo Pescador is the pickled Bonito del Norte. For its delicate taste and its intense but balanced flavor. It is indisputably the flagship of the house.
Since the mid-twentieth century the Canned White Tuna has been gaining more relevance and appreciation in the fishing industry and is therefore considered the best of the tuna family both in Spain and in international markets
At El Viejo Pescador they treat this treasure as it deserves and work it in an absolutely artisanal way to preserve each and every one of its properties and qualities. After cooking and peeling it, they cut it into loins and then pack it, sterilize it and label it with all their love and wisdom
