The mashing process is done in 3 temperature jumps in order to obtain on the one hand, the largest possible amount of fermentable sugars and, secondly, to work at a temperature that allows to obtain non-fermentable sugars that leave a malty body in the beer.
The contribution of hops in this craft beer is higher than in the Blonde Ale, combining the three hops (Nugget, Styriam Golding and Cascade) so that all the flavor of rye is appreciated but with a contribution of bitterness perfectly balanced
