Made with 100% raw sheep's milk from La Mancha, it is presented with the rind bathed in extra virgin olive oil and more than 3 months of curing. An artisan cheese with an ivory-colored dough, its paste is firm, compact and with an excellent density. A slightly flaky texture is a sign of its magnificent curing. It has an ivory colour on the inside and a light golden colour on the rind and a pleasant and intense but mild flavour, with an aroma and aftertaste of clean raw sheep's milk.
