Shiitake, also known as the "samurai mushroom," has been cultivated in China and Japan for approximately 2000 years, and was reserved exclusively for the emperor and his followers. Shiitake is part of culinary art and even has religious significance. Reishi is a wild mushroom that grows in the vast mountainous forests of Asia. Lastly, maitake is a dark brown, fan-shaped mushroom that grows on stumps or roots in northeastern Japan. In this country, it is known as the "king of mushrooms."
