Cider from Normandy (France), more specifically from the town of Cambremer, where all the range of ciders are parcel-based. The Antoine Marois Rosière Extra Brut comes from a plot with southeast exposures with deep marl soils.
The apple varieties used are Fréquin Rouge, Bisquet, Saint Martin, and Rambeau. Manual harvesting, fermentation in stainless steel tanks with indigenous yeasts, fermentation control by racking, light filtering before bottling, natural bottle fermentation, with no disgorgement.
