Extra salchichón is made with the same raw material as Geras chorizo (predominantly pork hams), and undergoes the same traditional production process with a long natural curing in the air of our mountains at 1200m above sea level in an environment declared a Biosphere Reserve by UNESCO. In the preparation of artisan Geras salchichón, paprika is excluded and replaced by carefully chosen spices that enhance its flavor while preserving its characteristics naturally. To obtain 100g of Geras ham salchichón, we use 160g of meat.
