Harvesting is done by hand in 15 kg crates. After finishing, the grapes are stored in cold storage at about 5°C and vatted the following day. Manual selection grape by grape in selection table after destemming. Gravity vatting.
Cold pre-fermentation maceration, temperature controlled fermentation, malolactic fermentation in 500 liter French oak barrels. Aged for 7 months in barrels and then in bottle
