Emmental is one of the largest cheeses in the world. Each of the flattened cheese wheels is handmade with 1,200 liters of raw cow's milk. It has a typical smooth, light yellow rind. The flexible paste is a beautiful dark yellow and has holes the size of a cherry, a walnut, or even a golf ball. Authentic Emmental has a complex aroma of meadows and flowers, with hints of raisins and wood fire. Its taste is strong and fruity, with a woody aftertaste. It is delicious consumed on its own, following the Swiss example of slicing it thinly with the help of a cheese knife and serving it for breakfast, or alongside other cheeses for lunch or dinner. It is ideal melted on toast.
