Like all hard cheeses, Tomme de Savoie can be stored for up to a month, preferably in the bottom compartment of the refrigerator. If you bought it by the slice, leave it in its original packaging. Otherwise, you can wrap it in cling film, as long as you poke a few holes in it so that the cheese can breathe. Finally, a gourmet trick is to cover the tomme with a cloth soaked in white wine.
In Savoie, its native region, tomme is eaten at breakfast and also serves as a snack or a snack! But it also finds its place on a cheese platter, just as it can participate in the preparation of delicious traditional dishes like truffade or tartiflette. To enjoy it raw, remember to take it out of the fridge half an hour in advance.
