Mark: Bodega Toro Albalá
For decades, Toro Albalá has been making its handcrafted vinegars at its facilities in Moriles (Córdoba). This PX balsamic vine gar is based on fine wines to which Pedro Ximénez grape must is added. Its long aging in Castilian oak barrels results in a high quality vinegar, with great aromatic complexity and a unique personality. Black in color with golden edges, intense aroma with toasted notes (licorice, coffee and raisins) and a smooth and unctuous entry in the mouth, with an attractive contrast between sweetness and acidity and a touch of bitterness, it is the ideal choice for dressing dishes such as arugula rolls with goat cheese and cherry tomatoes or Asian cuisine.
