This is a complex and intense wine, made from Pedro Ximénez grapes harvested in mid-August and laid out in the sun for 7 to 9 days to concentrate all its sugars. After pressing, the wine was left to settle for 12 months in stainless steel tanks, after which it was aged in American oak barrels for 27 years.
