Artichoke hearts from Navarre with the protected geographical indication Alcachofa de Tudela
Denominated the flower of the orchard because of its characteristic shape, in Navarre only the so-called "Blanca de Navarra" is grown. This variety differs from others by its rounded shape and by having a circular hole at the top because its leaves do not come together to close the flower head. It is also distinguished by having a stem of between 15 and 20 cm. and two leaves, as well as being very tender and not have vilanos - kind of hairs - inside.
The planting is produced in the field
The planting takes place in early August, while the collection is done in stages and by hand, every seven or eight days in spring, and every six days in autumn. There is a second shoot that is harvested in mid-March, and even a third, which comes into production in mid-July
Since ancient times it has been believed in the healing and curative powers of artichokes that boiled or infused, have a considerable tonic, digestive, diuretic, antirheumatic and protective actions of the liver. To prevent the oxidation of vitamin C and the consequent blackening of the artichoke by the oxygen in the air, the artichokes are sprinkled with a few drops of lemon juice
