The "bou de vara" is the fishing gear that gives its name to our preserves. We chose it because it is identified with our traditional vision and strongly rooted in the seafaring world. Its use is only authorized in the Ria de Arousa, and occupies a prominent place in the history of the town of Rianxo.in the last months of the year, when its capture is allowed, the bou de vara flora returns to port among others with volandeiras, its star product, bivalve mollusk of the same family as the scallop and scallop, but with a more rounded shell and tone anaranjado.Como other bivalves, is a filtering species that feeds on phytoplankton. It is rich in vitamins A and B, low in fat, and high in protein and minerals such as calcium, iodine and phosphorus, packed in a traditional way, piece by piece, by expert hands. From the sea to the can in a matter of hours, to preserve all its qualities with maximum freshness. The volandeira BOU DE VARA is prepared in a traditional seafood sauce, based on onion, tomato, bay leaf, vinegar and extra virgin olive oil.
