Peat is generated by the decomposition of plants such as moss, algae and heather by microorganisms over several thousand years, in humid areas and low oxygen concentration Due to its high moisture content, the peat during its evolution develops smoky, fatty and spicy aromas allowing the wet malt to develop them in its process.
The kilning process is a very simple one
The peat kilning process produces aromas of iodine, licorice, smoky, ash and clove
