The capture of the White Tuna takes place in the Bay of Biscay, where it is fished by the Cantabrian inshore fleet and then sold at the fish market. Once the best and freshest specimens have been selected, and after a process of fresh preparation, the fish loins are cut and packed using traditional techniques. Bonito tuna is one of the staple foods of the Mediterranean diet. Canned tuna is an important source of antioxidant compounds, highlighting its high nutritional properties, as it is rich in linoleic acid and Omega 3. It is also a good source of high value proteins and possesses diverse quantities of vitamins and minerals. Among the vitamins are those of the B group, such as B2 (more abundant in blue fish) and B9, although its content is less relevant when compared to other foods rich in these nutrients. Compared to other fish, tuna has an outstanding vitamin B3 and B12 content, the latter in higher quantities than many fish and meats. Bonito, being an oily fish, also has fat-soluble vitamins, such as A and D, which accumulate mainly in the viscera. In relation to minerals, bonito has interesting amounts of potassium, phosphorus, magnesium and iron, as well as iodine.
