The elders from the Rueda region say that this wine "tastes like the Verdejo of old". Nosso marked a turning point in the history of Bodegas Menade, a natural Verdejo, without the addition of sulfites, neither in the field nor in the winery, without sulfur or copper treatments. It is a wine that is thought of from the vineyard and with which they intend to express the meticulous work they have been carrying out in the field for more than 10 years.
Nosso smells like the first day of harvest and damp earth. At dawn on the Castilian plateau, when the damp earth reminds us of childhood. It reminds us of honey from bees, grape juice, natural.

Tasting notes: Nosso is a white wine that on the nose presents aromas reminiscent of stone fruits accompanied by herbal nuances reminiscent of thyme or fennel accompanied by a mineral touch. A subtle presence of carbon dioxide may appear, making its passage through the mouth even more refreshing and balanced, with a slightly bitter note at the end, a characteristic reminder of the variety.
Elaboration: The grapes used come from Finca Menade, located at about 750 meters of altitude near the Duero. The soils are mainly clayey and stony.
Nosso is made entirely by hand and naturally, without using harmful products for cultivation in the various processes carried out.
After the harvest, the grape of Nosso is promptly transported to the winery, where the grains are first allowed to ferment with wild yeasts at temperatures ranging from 18° to 24°.
After alcoholic fermentation, we allow the development of malolactic fermentation with its own yeasts; which gives the wine oiliness, volume, and microbiological stability to be enjoyed anywhere in the world. Nosso finally ages with its skins for between four and five months.

The Vineyard
The key is to combine tradition and technology to pamper the vines. It is about seeking an alliance with the environment to take advantage of the resources it offers, caring for it through traditional cultural practices. At Menade, they replace chemical treatments with other natural techniques, such as plant infusions (nettles, cinnamon...) or whey, which are more respectful of the soil, the vine, and the yeasts. Far from being enemies, the insects that populate the Menade vineyard are faithful allies for pest prevention. First, they are attracted with aromatic extracts to act as predators and then rest in their 'hotels', pollination gardens full of aromatic plants where insects and reptiles live in harmony. The ecosystem of the estates is completed with a series of mobile shrubs and trees to improve the biodiversity that populates the vineyard. A poly-specific garden with more than 40 species from Castilla y León that is alive all year round welcomes visitors to the winery. All these practices have an impact on the final result of the wines, as well as tasting good, they feel good. They produce wines free of allergens and histamines. Through all these mechanisms, Menade has gone beyond the organic label. They are no longer green, they are natural.

Also known as the Pollination Garden of Bodegas Menade, it is a large poly-specific garden with native species from Castilla y León that is alive all year round, so perennial and tail species have been employed in order to develop a large floral circuit for all types of insects, seeking a great entomological variety.
The Insect Hotel contains 40 species representative of the different strata of the ecosystem. At ground level, small-stem aromatic species have been planted, such as lavender, sage, or different types of rosemary.
At the middle level, there are wild roses, red heather, sloes, elderberries, and wild blackberries, among others.
