CAMPAGNOISE Whole Duck Foie Gras is composed of whole lobes of extra duck foie gras, specially selected for its superior quality (very little fat). It is carefully de-veined by hand and then cooked in its jar. To preserve all its flavor, we cook our Whole Duck Foie Gras according to the traditional recipe of our grandmothers, seasoned only with salt and pepper. It thus retains its natural character, all its delicacy and unique flavor. A touch of fleur de sel and a good quality, freshly crushed bell pepper will enhance the flavor and softness of your La CAMPAGNOISE Whole Duck Foie Gras on the palate.
Tasting tips:
Just take it out of the fridge and pour a splash of hot water over the jar to unmold more easily. Wait 5 to 10 minutes for its texture to melt and have an exceptional flavor. With a toothless knife or preferably a lyre, make slices of about 50g that you place delicately on a plate. You can serve it with onion confit or fig or apricot chutney, excellent on a slice of good toasted country, nut or spiced bread.
