Sweet potato is a tropical or subtropical plant, belonging to the Convolvulaceae family. It needs a warm climate. If it gets too cold, it harms it, they freeze. In Latin America it is better known as sweet potato or yam.

It is native to tropical America, it is part of its most basic diet and from there it spread to the Antilles. Spanish colonizers brought it to the Philippines and the Maluku Islands. Later, Portuguese navigators brought it to India, China, and Japan.

In countries like Mexico, it is essential in the diet of its people, especially children, as they make candies, jams, compotes, and desserts with them. It is also widely used in Peru and the USA. In Spain, sweet potatoes are associated with the idea of Christmas, due to the tradition of street vendors selling chestnuts and sweet potatoes.

Currently, the main producers are: China, Uganda, Nigeria, Indonesia, Rwanda, Vietnam, India, and Japan.
