Valleoscuro is a cheese made from pasteurized goat's milk, using lactic coagulation and aged with natural molds and charcoal. It is produced in Andalusia.
The Valleoscuro cheese won the Super Gold medal at the 2024-2025 World Cheese Awards, the Gold medal at the 2023 WCA, and the Silver medal at the 2021 WCA.
It features a white rind, completely edible, covered by a delicate veil of mold and a layer of ash made from olive pit from Jaén, a detail that pays homage to its origin.
The paste of Valleoscuro cheese, with an ivory hue, stands out for its smooth and compact texture. Beneath the rind, it becomes subtly fluid and creamy, offering an elegant and enveloping sensory experience.
Valleoscuro has a gentle goat flavor. It is a soft and mild cheese, with hints of fresh cream and hazelnut. On the nose, it evokes notes of moss and freshly milked milk, providing a natural and authentic sensation.
Pairing:
• Ideal with nuts, especially walnuts.
• Excellent on rustic or country bread.
• Its melting ability makes it a great ally in warm salads, roasted vegetables, or boiled potatoes.
• On cheese boards, it adds a distinctive touch thanks to its characteristic square shape.
About the cheesemaker:
This cheese is a creation of “Quesos & Besos,” a small family business founded in 2016 in Guarromán (Jaén).
Its families have been working with goat's milk for three to four generations, both in the sale of milk and in the production of goat cheese.
The Málaga goats from which the cheese is made graze in the southern mountains of Jaén.
