Some of our pigs reach double the age of the rest of 100% Iberian pigs, which means they spend double the time in montanera, 2 montaneras, double the acorns of a normal ham. At Don Ibérico, we know that not all hams are the same, so we have decided to offer you two options for sliced ham, a whole ham which equals 38 packs + 2 little packets of tips. Does my ham have a lot of fat? 100% Iberian Acorn-fed ham always has a layer of external fat (yellow fat) higher than the rest of Iberian hams. Thanks to this layer, the ham can withstand all the necessary months for its proper curing. The total yield of the ham can vary between 38% and 44%. This means that not all pieces are the same and can vary up to half a kilo of meat up or down in an 8kg ham, and it is normal to have about 3.2kg of meat in an 8kg ham once we have removed the bone and external fat. Usually, the larger the ham, the higher the % of meat. Anyway, if you think the performance of your ham is clearly below these percentages, do not hesitate to contact us.
