Agar-agar is a substance extracted from red algae and acts as gelatin, as it absorbs 200 to 300 times its weight in water.
This natural powdered gelatin can be used as a substitute for animal gelatin in cooking, by dissolving the necessary amount in hot liquid, not exceeding 65ºC, so that it does not melt, thus losing its gelling power.
It is a 100% natural vegetable gelatin, with a gelling action up to eight times greater than animal gelatins.
