Agar Agar is an algae extract that is used as a substitute for gelatin and to thicken foods, whether sweet or savory, without adding any flavor. Perfect for preparing flan, bavaroise, jam, quince jelly or ice cream. It is a gelling agent of vegetable origin
The amount to use will depend on the desired texture. To obtain a medium texture, i.e. a soft gelatine, add 4 grams of agar agar powder per litre. If what we want is a hard texture gelatine, we will have to add up to 10 grams
