The goats are happy and raised in freedom, and we find nuances of rosemary, thyme, lavender, rockrose, and other shrub species from the Sierra Norte Granadina in both the milk and the cheese. Starting from this natural raw material, we make the cheese through a traditional process in which we only add kid rennet and salt.
