The Altozano White Wine from Finca Constancia presents this IGP Vino de la Tierra de Castilla (Spain), created from the grape varieties Verdejo 70% and Sauvignon Blanc 30%.
The grapes are harvested at night in order to preserve the essence of each variety, which will be extracted in the press after a cold maceration. Alcoholic fermentation is carried out separately for each variety, and in order to profile its production, the wine remains on its fine lees for a minimum of two months, thus obtaining its final unctuousness in the mouth.
To preserve the fruity aromas of the Verdejo grape, a night harvest is carried out. A pellicular maceration is carried out and then pressed, obtaining the must. Fermented in stainless steel tanks, keeping the varietal aromas intact. The wine will then remain in contact with its fine lees for at least two months.
