Mouth: Pleno, muy seco, sabroso y ligeramente amargo. Con recuerdos de frutos secos. Final largo con gran persistencia en retrogusto.
Nose: Recuerdos intensos de levaduras del velo de flor y almendras. Elegante, mineral y salino, con ligeros toques oxidativos.

This wine is made from the Pedro Ximénez grape. It comes from the solera with more aging of the so-called "finos" of the Alvear family that, after having a biological aging of 12 years, still keeps alive the velo de flor. It is between the fine line that separates those old "finos" wines from the younger "amontillados"
If we talk about pairing, it is ideal to accompany oysters, fish soups or seasonal vegetables such as asparagus, artichokes, menestras....
