All the vineyards are organic, certified and controlled by the CPAEN-NNPEK (Council of Organic Agricultural Production of Navarra). The Red Wine Aroa Jauna comes from low production vineyards and located in the northern border area between the Urbasa and Andía mountain ranges. These are planted in calcareous clay soils that have never been in contact with chemical synthesis products. This area is one of the highest in Navarra and stands out for its cool climate due to the influence of the Cantabrian Sea which contributes to the ripening of the varieties.
Harvesting and Winemaking
During the harvest, the bunches were picked by hand between October 6 and November 3, when the later variety, Cabernet Sauvignon, was harvested.At the time of entering the winery and begins its elaboration method in which it ferments at 26ºC, makes 18 days of maceration and 2 daily pumping over.
