A healthier alternative to traditional sausage: made without pork, we achieve a 20% fat reduction. We select turkey thigh meat together with a small portion of duck to obtain a lean, tender and healthy product. As we do with our traditional salchichón, for two months it undergoes a quiet cold-drying curing process, giving it a flattened shape and a special spicy flavor and texture.
