Ribera del Duero RECOMMENDATION DON IBÉRICO -
750ml Bottle
The golden ratio is an irrational number that represents the perfect proportion. It is found in nature: in the veins of tree leaves, in the snail's shell, and in the sunflower. It is also attributed an aesthetic character to objects whose measurements follow the golden ratio, as is the case with the ovoid deposits where this wine is aged.
Red wine made with Tempranillo grapes with an average age of 50 years. Aged in new French oak barrels for 14 months.
Cherry garnet color. Aromas of black fruit, notes of nuts and spices with a soft toasty finish. Intense, powerful, spicy, and elegant on the palate.
16 - 18ºC
The harvest is carried out by plots differentiated by quality. The grapes are harvested at their optimal ripeness in 12 kg boxes and cooled to 3ºC in a cold chamber; 24 hours later they are selected and destemmed without crushing. Gravity-fed fermentation takes place in inverted truncated cone deposits, and for 5 days a cold skin maceration is carried out without fermenting, in order to enhance the primary aromas. Fermentation is carried out at a maximum temperature of 28ºC to extract all the grape's quality. Malolactic fermentation takes place partly in barrels, partly in ovoid concrete and stainless steel deposits. Aging is done in new French oak barrels and concrete deposits for 14 months.
