Azuki or red soybean, is a nutritious legume with a high protein content. Its benefits on the kidneys and bladder are known. Cooked with kombu seaweed helps regulate blood sugar levels.

Wash the azukis and soak them for 6 to 8 hours with a piece of kombu seaweed. Cook over low heat 1 measure of azukis with 2 measures of water, for 45-60 minutes. It can be served with vegetables or combined with cereals.
