The Campo Eliseo Verdejo White Wine, is made from one of the most important Spanish white grape varieties typical of the Rueda D.O. with a very marked phenolic character.

The vineyard where this grape variety comes from is located in La Seca, with an average age of 40 years and with a stony, deep and poor soil with clay in depth, no irrigation is applied and it is worked organically, in addition to having a continental Mediterranean climate with plenty of light.

The winemaking process begins with a nighttime manual harvest in 13 kg crates, followed by cluster selection on the table without destemming; maceration is pre-fermentation and lasts 12 hours in an inert membrane press, malolactic fermentation is not carried out. The lees are worked daily by battonage for 4 months, separating the thick lees and leaving it on its fine lees. Aging in oak barrels for 9 months.
