Manual harvesting. Once in the winery, the grapes are destemmed and each variety is pressed separately until obtaining 60% of the must. Subsequently, they undergo their first alcoholic fermentation in stainless steel tanks at a controlled temperature between 15-17°C. Then, the varieties are blended and bottled for a second fermentation in the bottle.
