Sturgeon, the fish from which its roe, which is caviar, is extracted, is on the verge of extinction. The sturgeon's hard, white flesh and roe have been prized by humans since ancient times. Due to overfishing and environmental alterations of the fluvial habitat (pollution, construction of dams...) in many parts of the territory this species experienced a serious decline and began to disappear from many regions until it was concentrated, almost exclusively, in the Caspian Sea and the Black Sea. It should be noted that the sturgeon is an anadromous fish, i.e. it reproduces and is born in the river and then moves to the sea, and for spawning it needs a deep and pebbly bottom, with fast flowing and well oxygenated waters.

Although the sturgeon family consists of 23 species, only four of them are suitable for caviar production and meat consumption (all four live in the Caspian Sea): -The Beluga is the largest freshwater fish in the world, with a maximum length of 8 m and a weight of over a ton. -The Asetra has an average length of 1.2 metres and weighs between 20 and 80 kg. - The Sevruga is the smallest of the three and the most elegant. -The Karaburun inhabits the southern Caspian Sea and its eggs are very similar to those of the Asetra.
