This caviar is obtained from the Huso Huso sturgeon and comes from Iran. Being the largest of the sturgeons (in the wild it can reach a weight of several hundred kilos), it produces the largest roe. Its colour is grey. Its texture is very creamy, with a complex marine flavor and long in the mouth. It is the most prized caviar because of its scarcity in the wild and its longer breeding in captivity. Some caviars sold as beluga are not: check the CITES label on the back of the tins to be sure that the sturgeon is Huso Huso (code HUS) and that it comes from Iran (code IR).
