Chitosan is a fiber (amino-polysaccharide) derived from the shells of crustaceans. Thanks to its structure and the "amino" group that forms it, in an acidic environment like the stomach, it is capable of absorbing ingested fat. The fat it captures also becomes unabsorbable, so its caloric value is zero, with the fats being eliminated along with the fiber.
