In Legardeta, the Tempranillo grows at a medium altitude and is planted in not very fertile soils that are the starting point for obtaining balanced vegetation, controlled production, and medium-small sized clusters and berries. Furthermore, the special climatic conditions allow this variety to ripen perfectly, without overripening, and maintaining optimal acidity values to produce wines with character, freshness, and aging potential.
The Colección 125 Reserva comes from the selection of the best plots of Tempranillo from the Legardeta Estate, which are carefully hand-picked in small 200 kg containers. Later in the winery, the grapes are selected and gravity-fed into 20,000 kg stainless steel tanks, where the wine ferments at a controlled temperature. Gentle extraction through manual pump-overs is essential during this process. Once malolactic fermentation is complete, the wine is gravity-fed into French oak barrels where it will age, depending on the characteristics of the vintage, between 15 and 18 months. Colección 125 was first released in 1985 to commemorate the 125 years since Chivite's first wine export in 1860. This red wine comes from the selection of the best Tempranillo plots from the Legardeta Estate located in Navarra. Thanks to its geographical location and the influence of Atlantic and Continental climates, the result is an exceptional wine, recognized with 94 points by the Peñín Guide.
