Bunker is my story I'm Enrique Lozano, your Master Distiller, and this story begins more than 13 years ago as a hobby in a tiny cellar, my bunker from which I make Léon artisanal gin.
There I spent hours and hours distilling, testing, merging elements, acquiring knowledge about different types of distillates and analyzing their evolution in my little still.
Over time I discovered that this hobby was my passion, it took up all the free time I had, but it certainly enriched my spirit. It was an act for myself, without further pretensions. But one day everything changed, I decided to turn my life around, make my hobby my profession and show it to the world.
For this I invested all my money in copper and metal, acquiring a dream, "Cloe", the jewel in the crown of the distillery. "Cloe" is a state-of-the-art alembic, of which there are only a few worldwide, which offers the possibility of applying techniques used in perfumery, for example the dragging of essential oils.
After starting to work with "Cloe" a world of possibilities opened up to me, since I could have absolute control over each distillation process. I could make my philosophy a reality, love and respect the product, giving it the necessary time to allow its maximum quality and offer the result in the form of a distillate.
For me distillation is an art that requires knowledge and intuition through which I express emotions and show my vision of the world. That has been the reason for choosing a small village in León away from the madding crowd that encourages creation as the location for the microdistillery, endowed with a perfect climate for distillates.
This is how Bunker Distillery was born:
