Overnight harvest and gentle pressing of the grapes for 48-72 hours, fermentation in stainless steel with wild and cultured yeasts. A small portion of the wine is fermented in French oak barrels at high temperaturas.Estamos for one of New Zealand's best whites , a bright wine with balanced acidity and full of fruit. The palate appears creamy, fluid, with a pleasant texture, accompanied throughout with hints of toast and floral notes.
