Don Zoilo Palo Cortado is a sherry wine produced by Williams & Humbert with the Palomino variety.
First yolk musts from the best vineyards, cold static decanting and fermentation at 22ºC. Early clearing, classification by fineness, fortification at 15º with the best wine distillates to obtain the traditional sobretablas, passage to the Criaderas and Solera system of its solerajes de finos in biological ageing.
Exceptional wine, ideal for tasting slowly. It can be served with some dried fruits, cured cheeses and, at the table, with consommés, stews or jellied meats.
Wine with an old gold colour. Very sharp and intense aroma, complex with light nuts and hazelnut. In the mouth it is dry, silky, very balanced acidity, full-bodied, with a very elegant and persistent character in the mouth, tremendously expressive retronasal.
