Cold pre-maceration for 4 days. Fermentation with indigenous yeasts and controlled temperature between 15 and 22 degrees. Grapes with stems 35% and destemmed 65%. Macerations between 20 and 30 days depending on the parcels and tanks. Soft extractions by pumping over and delastage
