El Jorco is a joint project between winemaker Raúl Pérez and César Ruiz, Flequi Berruti, and Nacho Jiménez from the Alma Vinos Únicos and La Tintoreria team.
The project began in 2009 when, for two vintages, they tested different vineyards in the vicinity of Cebreros. However, they were not satisfied with the results and the wines did not enter the market.
Finally, they found a vineyard planted with garnacha in 1915 on granite soils in the Jorco area, also in Cebreros. Currently, they produce three wines: one that comes from various vineyards scattered throughout the region, and two single vineyard wines, El Jorco and Las Enebradas. Las Enebradas comes from a vineyard in the Navatalgordo area at an altitude of about 1000 meters. The winemaking process aims to express the character of the region with elegance and sinuosity. To achieve this, they use up to 40% whole clusters, large used barrels, and gentle extractions. The next step is to build a winery so that the entire process takes place in Cebreros.
