Made from raw sheep's milk. The maturation and preservation is carried out by master cheesemakers, who, despite the advances in technology, keep the traditional ways of elaboration. It is characterized by its appearance when cut, with abundant eyes distributed heterogeneously. With acidic and salty flavors within the elementary ones, with spicy sensations, the persistence in the mouth is long with slow evolution, leaving a pleasant memory. Packed wedges of approximately 750 grams, with natural rind. Cured for a minimum of 1 year.
