This Blue Sapphire edition is presented in a 500 ml bottle, blue and shaped like an emerald cut sapphire. It contains Organic extra virgin olive oil of the Picual variety. Picual Organic oil has a strong personality. They are green colored oils, with a very intense fruity flavor, with a sensation of density, spiciness and medium bitterness. This variety is highly appreciated for its early production, ease of cultivation and the quality of the olive oil obtained, with a high proportion of oleic acid. Its sensory profile can be defined as very intense fruity of green olives, and very complex, with notes of fig tree, grass, stalk, alloza, citrus and tomato. On the palate, it is sweet on entry, moderately bitter and somewhat spicy, all very balanced. Picual Organic has a more intense fruitiness compared to conventional Picual, this is due to the use of only organic products for the nutrition of the olive trees

The elaboration process

The fruit is harvested with the utmost care, through a selection process. From the moment the fruit begins to ripen, a multitude of tests are carried out in the different areas of the estate until the determination of the area and the ideal harvesting time. Harvesting takes place between October 1 and 15, depending on the year and the development of the fruit. Due to the fact that the month of October records daytime temperatures of around 30ºC, the fruit is harvested during the night to ensure that the temperature for harvesting and subsequent milling is below 20ºC
