This Blue Sapphire edition is presented in a 500ml bottle, blue and shaped like an emerald cut sapphire. It contains organic extra virgin olive oil from the Picual variety. Picual Organic olive oil has a strong personality. They are green oils, with a very intense fruity flavour, with a sensation of density, itchiness and medium bitterness. It is a variety very appreciated by the precocity of its production, facility of culture and quality of the olive oil that is obtained, emphasizing in this one the high proportion of oleic acid. Its sensory profile can be defined as very intense fruity of green olive, and very complex, with notes of fig tree, grass, stem, alloza, citrus and tomato. In the mouth, it is sweet, moderately bitter and somewhat spicy, all very balanced. Picual Organic, presents a more intense fruity compared to conventional picual, this is due to the use of only organic products for the nutrition of the olive trees

THE ELABORATION PROCESS

The fruit is harvested with the utmost care, through a selection process. From the moment the fruit begins to ripen, a multitude of tests are carried out in the different areas of the estate until the ideal area and time for harvesting is determined. Harvesting takes place between the 1st and 15th of October, depending on the year and the development of the fruit. Due to the fact that October has daytime temperatures of around 30ºC, the fruit is harvested during the night to ensure that the temperature for harvesting and subsequent milling is below 20ºC.
