Organic extra virgin olive oil Picual variety. The Picual Organic oil has a strong personality. It is a variety highly prized for the earliness of its production, ease of cultivation and quality of olive oil obtained, highlighting in this the high proportion of oleic acid. Picual Organic has a more intense fruitiness compared to conventional picual, this is due to the use of only organic products for the nutrition of the olive trees
THE ELABORATION PROCESS
The fruit is harvested with the utmost care, through a selection process. From the moment the fruit begins to ripen, a multitude of tests are carried out in the different areas of the estate until the area and the ideal harvesting time are determined. Harvesting takes place between the 1st and 15th October, depending on the year and the development of the fruit. Due to the fact that the month of October records daytime temperatures of around 30ºC, the fruit is harvested during the night to ensure that the temperature for harvesting and subsequent milling is below 20ºC.

SENSORY PROFILE
Very intense fruity of green olive, and very complex, with notes of fig tree, grass, stem, alloza, citrus and tomato. In the mouth, it is sweet entry, moderately bitter and something more spicy, all very balanced.
