The fruit is harvested with the utmost care, through a selection process. From the moment the fruit begins to ripen, a multitude of tests are carried out in the different areas of the estate until the area and the ideal harvesting time are determined. Harvesting takes place between the 1st and 15th of October, depending on the year and the development of the fruit. Due to the fact that the month of October records daytime temperatures of around 30ºC, the fruit is harvested during the night to ensure that the temperature for harvesting and subsequent milling is below 20ºC.
