THE ELABORATION PROCESS

The fruit is harvested with the utmost care through a selection process. From the moment the fruit begins to ripen, numerous tests are carried out in the different areas of the estate until the determination of the ideal zone and time for harvesting. The harvest takes place between October 1st and 15th, depending on the year and fruit development. Due to the fact that October has daytime temperatures around 30ºC, the fruit is harvested at night to ensure that the harvest temperature and subsequent crushing is below 20ºC.

Obtaining the best Extra Virgin Olive Oil is more than a technique, it is a ritual. Without thermal oscillations and at the appropriate temperature from fruit extraction to the extraction of its elixir.

SENSORY PROFILE

It is an oil of great value and its main organoleptic characteristic is its fresh and sweet fruity aroma. Its taste is smooth and not aggressive on the palate. And on the nose, it presents an intense fruity aroma with hints of ripe fig, banana, and apple.
