Traditional Mediterranean dish made in a traditional way with vegetables from the Navarre orchard. Completely natural, it is composed of roasted red pepper, eggplant, and onion. It is ready to eat, can be heated and used as a starter or side dish, or can be prepared cold as an appetizer by placing the escalivada on a slice of toasted bread and topping it with anchovy or bonito.
