Oil from early harvest, very aromatic and with a great olfactory-gustatory complexity, highlighting herbaceous aromas, green almond, artichoke and toasted notes. In the mouth it is enveloping, spicy, with a medium-high bitterness and spiciness.
With a very high phenolic content, it is the best EVOO to taste raw, causing a spectacular synergy with accompanying products, due to its assertiveness in the mouth, producing a unique gastronomic distinction.
It pairs very well with products that have been previously well aired such as long-aged meats, mojama, tasajo, etc., products that are linked to a previous curing process or when we seek persistence in the mouth.
